2 heads mixed green lettuce or spinach
½ cup sundried tomatoes
1 med scallion or green onion, sliced
3 Tbsp tahini (ground sesame)
2 Tbsp apple cider vinegar
1 Tbsp Dijon mustard
8 eggs (hardboiled)
Wash, drain, and tear lettuce. Place in a large serving bowl.
Add green lettuce, onions, and sundried tomatoes to bowl.
In a small bowl, mix tahini, vinegar, mustard, salt and pepper. Pour over greens. Toss.
Top with hardboiled eggs.
